I used Google Ngram to create a chart that shows the use of the word Jewish in comparison to the use of the word Hebrew between 1750 and 2000 in American English.  It was interesting to see that the word Jewish gained a lot of usage around the 1930-Present period.  This was most definitely impacted by WWII and the Holocaust… the term Hebrew seems to be pretty consistent throughout history.  Here is my chart:
